2. Lutèce
Lutèce is a tiny Georgetown neo-bistro, so the difficulty is mostly physical. There are only so many tables in its intimate dining room, and prime weekend slots disappear well before spontaneous plans take shape.
Use the official Lutèce website to reach its current Resy listing. Resy's September 2026 booking guide reports that tables open 30 days ahead at 11 AM. The restaurant itself does not publish that cadence prominently on its homepage, so verify the live calendar before setting an alarm.
Flexibility matters here. The patio can have more availability than the dining room, and the Chef's Table may appear at different times. Resy also exposes Notify when a service is full. The menu changes frequently, which is part of the appeal rather than a reason to wait for one specific dish.
Best fallback: search patio, dining room, and Chef's Table inventory separately, then consider an early or late dinner.
3. Omakase at Barracks Row
Omakase at Barracks Row has the most precise drop on this list. Its current Resy page says reservations go live two weeks ahead at 12:01 AM. The restaurant is reservations only, and tickets are currently listed at $210 plus tax and applicable charges per person.
That leaves little room for improvisation. Pick more than one acceptable date, sign in before the drop, and be ready to complete a prepaid booking. Do not count on a walk-in. The restaurant's public booking page does not clearly expose all refund and transfer terms before checkout, so read the terms attached to the exact experience.
This is a case where smaller party size can help, but it does not create inventory. If your preferred date is gone, turn on Resy Notify and keep alternate dates open.

4. La' Shukran
La' Shukran combines a small bistro, bar, and seasonal rooftop in the Union Market District. That creates several kinds of inventory, but prime indoor dinner tables remain a serious chase.
Book on the official La' Shukran Resy page. Current guidance says reservations are released in monthly batches, with the September Resy booking guide reporting midnight on the first day of the preceding month. The live listing requires a card and states that cancellations within 24 hours incur a $25 per-person fee.
The fallback is better than at many hard tables. Later bar seats are held for walk-ins, and rooftop tables can be released on the day or a few days ahead depending on weather. That means a sold-out indoor calendar is not always the end of the night.

5. Minibar by José Andrés
Minibar is scarce by design. The tasting unfolds for a very small number of guests, so each monthly release carries much more pressure than a normal dining room.
The restaurant's official reservation page currently routes both the Chef's Counter and José's Table through OpenTable Experiences. The Infatuation's August 2026 guide reports that a new month opens at noon on the first day of the prior month and caps parties at four. Minibar's official page does not state that release cadence, so confirm it against the live experience calendar before the next drop.
Because these are ticketed experiences, expect payment and cancellation terms to appear during checkout. Read them before confirming. A standard bar walk-in does not substitute for the Minibar tasting, although the separate Barmini has its own reservation path.
Best fallback: search both tasting formats, use a smaller party, and check for returned OpenTable Experience inventory.
6. Pascual
Pascual's live-fire Mexican cooking has earned major attention, but its size is the real booking problem. The Capitol Hill dining room is compact, and prime indoor tables go quickly.
Start at Pascual's official website, which links directly to its Resy listing. Both Resy's current city guide and The Infatuation report a 30-day booking window. Neither source clearly publishes a clock time on Pascual's own site, so do not invent one. Check the calendar at the start of the 30-day window and again during the day.
Pascual does preserve some flexibility for walk-ins. Early tables, the bar, and the patio can be easier than a prime indoor reservation. Weather and party size still matter, so call the restaurant if a special occasion cannot tolerate uncertainty.

What to do when every table is sold out
First, widen the request. A party of two, a 5 PM or 9 PM dinner, and several possible dates will usually have a better chance than one fixed Saturday at 7:30 PM.
